Sous Chef specializing in Cakes is a key culinary leader in a luxury hotel's patisserie, blending creativity in cake design and decoration with vital kitchen management and staff supervision duties. They ensure all cakes and confections meet the hotel's exacting luxury standards.

Key Duties and Responsibilities

• Cake Production & Decoration: Oversee and participate in the daily preparation, baking, and artistic decoration of a wide variety of cakes, ensuring flawless execution in presentation, texture, and flavor. This includes:
  • Specialty Orders: Managing the production of custom cakes for events like weddings, banquets, and special guest requests, potentially meeting with clients to discuss designs and details.
• Quality Control & Consistency: Act as the final point of quality control for all cakes and related items, conducting regular tastings and checks to maintain the luxury brand's high standards.
• Recipe & Menu Innovation: Collaborate with the Executive Pastry Chef to develop new cake recipes, incorporating seasonal ingredients and innovative techniques to keep offerings fresh and aligned with market trends.
• Team Leadership & Training: Supervise, train, and mentor the pastry team within the cake section. Delegate tasks effectively, create work schedules, and evaluate performance to ensure smooth operations and staff development.
• Inventory & Cost Control: Monitor and manage the inventory of baking ingredients, ensuring proper storage, rotation, and usage to minimize waste and meet cost control targets.
• Hygiene & Safety: Enforce strict adherence to all food safety, hygiene, and sanitation regulations (e.g., HACCP) within the cake and pastry section.

Essential Skills and Qualifications

• Experience: Requires significant prior experience, generally a minimum of 2 years as a Sous Chef or 4 years as a Chef de Partie in a high-volume, quality establishment, with specific expertise in cake artistry and large-scale production.
• Culinary Expertise: A deep understanding of baking science, various cake production methods, icings, fillings, and advanced decoration techniques, including sugar artistry and chocolate work.
• Leadership: Strong leadership, communication, and team-building skills, with the ability to manage a team effectively under pressure.
• Creativity & Detail Orientation: Exceptional creativity in cake design and a meticulous attention to detail are crucial for the luxury market.
• Education: A diploma or degree in Bakery & Patisserie or Culinary Arts from an accredited institution is often preferred.
